A fruit native of the highlands of Colombia and Ecuador, in Chile the subtropical papaw

The fruit known in Chile actually is the Carica pubescens variety of papaw whichcorresponds to the mountain papaw tree, so this fruit is different from the tropical papaw of Brazil andEcuador.The papaw tree is a herbaceous plant with an erect succulent trunk reaching a highs of up to 4meters. Its pivotal root is very sensitive to excessive soil moisture. It is a very fragile plant going intoproduction very young (when only a year and a half old) and having a comparatively short life span (6to 8 years). The fruit is a lobe-shaped, aromatic and slightly acid berry appreciated for its exquisite softand refreshing taste; it features highly beneficial properties for the human body, since it is poor in caloriesand rich in proteins, vitamins A, B and C and "papaine" enzyme which favors digestion.The Chilean papaya has a unique texture and taste not found in other fruits. The fruit of the papayahas a smooth texture and it is slightly crunchy. Many Attribute its unique flavor to a combination of tropicalfruits, a mix of peach, Mango and pineapple. The Chilean Papaya is not to be confused with its tropicalsister. Once the fruit picked, it is immediately peeled, pitted, cooked with beet root sugar and jarred.
