Brewing Guide: It is best to use a strong knife to carefully pry out the desired amount leaves and place in a teapot. Use 2-3g of tea leaves or fill the teapot 1/4 to 1/3 full with tea leaves. Ideal water temperature is boiling temperature at 100°C (212°F). For the first and second brewing, leaves should be steeped for about one minute. Gradually increase water temperature and steeping time for subsequent brewing. It is also recommended that you use Yixing purple clay (Zisha) teaware. Warm the steeping vessels (cups and teapot) by rinsing them with hot water prior to brewing. Good for many infusions.
Brewing methods vary widely by tea and individual preferences. The brewing instruction above is a only a simple guideline but will produce an excellent cup nonetheless. As with any tea, do experiment and do share with us your brewing techniques to get the best out of this tea.
Puerh is made from a broadleaf variety of tea and is grown in Yunnan province. It is initially processed like green tea but is then aged in a dark location for several years. This results in a form of oxidation caused by the growth of yeast on the tea and is similar to the method used to make wine. With Puerh it creates a unique taste that grows better with age. It's popularity has increased significantly in recent years not least due to its unique taste and the wide range health benefits that it is thought to bestow.
