        Xin Yang Mao Jian Tea  is a wonderful Green Tea that has a history of over 2,000 years and was mentioned in the famous book; "The Class of Tea" written by Lu Yu during the Tang Dynasty (618-907). The tea also won a gold medal from the Panama Pacific International Exposition, held in San Francisco in 1914.

     Brewing Recommendation: This tea is best brewed gungfu style in a small Yixing teapot but any teapot or large stainless steel tea ball will produce delicious results. Use 2 tsp of tea to brew one 8 oz. cup. Pour boiling water directly over leaves. Brew for 20 seconds to 1 minute. This tea can be used for many infusions.

     The tea is produced near Dabie Mountain in Xinyang County in China's Henan Province. The tea is harvested from the spring, through the fall, but the best tea comes from the early spring harvests. The tea farmers look for a bud with a single newly formed leaf when picking the tea. It takes about 50,000 of them to make 500 grams of processed tea.
