Chlorophyll, is a naturally oil soluble olive green pigment. Commercially it is mainly extracted from grass and alfalfa.
copper Chlorophyll(in), is derived from green plants, but gives a brighter hue due to the replacement of the naturally present magnesium with copper.
Saponification yields the water soluble copper chlorophyllins.
Both the water soluble copper chlorophyllins and the oil soluble copper chlorophylls show good stability to heat and light.
