Chocolate and Walnut Banana Bread
Ingredients:
- Non-stick Cooking Spray
- Non-stick baking paper
- 2 egg whites (from 50g Eggs)
- 60g (1/4 Cup) light sour cream
- 60ml (1/4 Cup) skim milk
- 2 tsp light olive oil
- 1 tsp vanilla essence
- 170g (2/3 Cup) mashed banana (about 3 small)
- 225g (1 1/2 Cups) wholemeal self raising flour
- 160 g (2/3 Cup) Sweetener (we use Splenda)
- 30g (1/4 Cup) chopped walnuts
- 50g Dark chocolate Chips (we use half a block of Holex dark chocolate block, chopped)
- Preheat oven to 180 deg C
- Spray a 20 x 10 c 5 cm loaf pan with non-stick cooking spray
- Line the base of the pan with non stick baking paper so as the paper overhangs the long sides
- In a small blowl whisk the egg whites, sour cream, milk, oil and vanilla essence
- Stir in the banana
- Place flour and sweetener in a medium bowl making a well in the centre
- Pour egg mixture into flour mixture and stir until just moistened
- Fold in chocolate chips and walnuts until combined
- Spoon into the pan and smooth out the surface
- Bake for 30 to 40 miuntes or until skewer comes out clean after being inserted into centre
- Leave to cool for 10 minutes
- Release from pan and allow to cool on a wire rack
