Chocolate and Walnut Banana Bread

Ingredients:

  • Non-stick Cooking Spray
  • Non-stick baking paper
  • 2 egg whites (from 50g Eggs)
  • 60g (1/4 Cup) light sour cream
  • 60ml (1/4 Cup) skim milk
  • 2 tsp light olive oil
  • 1 tsp vanilla essence
  • 170g (2/3 Cup) mashed banana (about 3 small)
  • 225g (1 1/2 Cups) wholemeal self raising flour
  • 160 g (2/3 Cup) Sweetener (we use Splenda)
  • 30g (1/4 Cup) chopped walnuts
  • 50g Dark chocolate Chips (we use half a block of Holex dark chocolate block, chopped)
  1. Preheat oven to 180 deg C
  2. Spray a 20 x 10 c 5 cm loaf pan with non-stick cooking spray
  3. Line the base of the pan with non stick baking paper so as the paper overhangs the long sides
  4. In a small blowl whisk the egg whites, sour cream, milk, oil and vanilla essence
  5. Stir in the banana
  6. Place flour and sweetener in a medium bowl making a well in the centre
  7. Pour egg mixture into flour mixture and stir until just moistened
  8. Fold in chocolate chips and walnuts until combined
  9. Spoon into the pan and smooth out the surface
  10. Bake for 30 to 40 miuntes or until skewer comes out clean after being inserted into centre
  11. Leave to cool for 10 minutes
  12. Release from pan and allow to cool on a wire rack
