Delicious chocolate brownies with chocolate chips and no added sugar are a favourite for all of the family. Keep them in an air tight container. If you wish to to reheat then 10 seconds in the microwave should do it.
You can serve them warm with icecream or enjoy them cold. This receipe can even be made into a layered cake.
We triple this recipe to make the a little more than viewed in the photo, and to make them a little thicker due to the size of slice tray we use.
Ingredients
2 Eggs
1/3 cup of dry sweetener (we use splenda)
2 teaspoons of Instant Coffee (we use espresso)
2 tablespoons of cocoa powder
1 tablespoon of water
1 tablespoon of olive oil
40 grams of melted low fat spread
1/4 cup wholemeal self raising flour
1/4 cup Dark chocolate bits (we use Holex)
You can dust will a little extra cocoa powder if you wish after baking
Cooking Instructions
1. Preheat oven to 180 deg C or 160 deg C for fan forced
2. Grease slice tray and line with baking paper
3. In a large mixing bowl beat eggs and sweetener together until thick and creamy
4. In a medium mixing bowl blend together using a the coffee, cocoa, water and oil until smooth
5. Stir in the melted spread into coffee and cocoa mixture
6. Fold the butter, coffee and cocoa mixture into the egg mixture
7. Fold in the flour and the chocolate bits
8. Pour into pan
9. Bake uncovered for 25 to 30 minutes
10. Let stand for 15 minutes and then turn onto wire rack
