Physical Properties:
In room temperature, citric acid is colorless translucent crystals or white particles or white crystalloid powder, odourless, has extremely acid flavour, in the damp air, has slightly deliquation. It can exist with the form of non-hydrate or monohydrate:when citric acid crystallizes from hot water, generating non-hydrate crystals;however,when it crystallizes from cold water,generating monohydrate crystals. When it is heated to 78 centigrade degree, monohydrate decomposes to become non-hydrate. In 15 centigrade degrees, citric acid can also be dissolved in anhydrous alcohol.
