Canned clams are an item that is widely distributed in the U.S.A. Clams are grown in nearly every part of the world. The predominant sources of import supply are from Asia or South America for economic reasons. Whole baby clams, and chopped or minced clams constitute the bulk of the volume. The primary can sizes are 3.75 oz., 6 oz., 10 oz. and 28 oz. Derivative products are: clam juice which comes packed in 12/8 oz bottles. This is a surprisingly good seller as most every recipe book with call for 'stock' as an ingredient and this is the only source. Clam sauce is another highly valued product. It comes in a red (tomato) recipe and a white (Oil) recipe. These are used in many Italian dishes, mostly over pasta. Smoked clams are packed in oil and come in 3.75 oz. easy open cans. These are typically found in the 'specialty' section of the grocery store.
