Gold Medal Winning Shiraz from Cloof
Description:
Full bodied wine with intense spicy flavours. This full bodied shiraz has an intense complex nose of white pepper, cloves, Cinnamon and mulberries. A deep dark red with spicy flavours and soft tannic structure, it is insanely concentrated, with dangerously seductive aromas and flavours. This wines luscious fruit was accessorised with the very best French oak.

Fermentation The Shiraz had 3 days of cold soak at 10ºC before inoculation and then fermented dry on skins for 8 days, at 30ºC. After fermentation it macerated for a further 10 days before being pressed.
Maturation After malolactic fermentation in tanks, the wine was transferred to barrels for 12 months. (33% new French oak was used). After fining and a light filtration the wine was bottled.
