Everybody knows the cockle for its shell. Take a look, for instance, at our logo: after all, it is the most common shell to be found on the beach. The cockle (Cardium Edule) is a little shellfish with a characteristic orange-yellow tip, which can be found in the shallow river estuaries of the European Coast. In the Netherlands, cockles are found in the Zeeland estuaries, as well as in the Wadden Sea.

Cockles live just underneath the sand, usually not deeper than 2 centimetres and do not grow older than 4-5 years. Through a so-called siphon, the cockle pumps the water over his gills and thus filters out the nutrients (suspended material and plankton) from the water. A two-year old cockle on average pumps half a litre water per hour through its gills. It is funny to realize that this means that the total cockle population processes the entire volume of the sea in only a few weeks time. As a shellfish, the cockle is hardly known in the Netherlands. This as opposed to Spain and other South-European countries, where it is perhaps one of the most famous 'tapas', very popular because of its sweet-salty taste.
