This is a Spray dried powder made from Vegetable Fat / glucose.

Coffee Whitener: - Essentially a Milk re-placer. Benefit of longer shelf life at ambient conditions and it’s a powder not a liquid. Different fat levels available. Used on its own in Coffee or an ingredient in other products.
Whipping base: - Essential used to mimic Cream and provide aeration in a cold dessert. It is added to whipped desserts to provide structure and mouthfeel.
Fat powder :- Added to Custard, Hot Bevs, Soup etc to provide body, creaminess mouthfeel and fat which would otherwise come from Milk or Butter. It is also used in Bevs as a way of getting Chocolate into a drink.
Why :- It’s the method of drying a slurry into a powder whilst encapsulating fat or other difficult to handle materials, such as Chocolate.
How:-
The water based ingredients, flavours, colours, emulsifiers, Milk protein etc
are mixed together.
Fat and glucose syrup are added and the resulting slurry is homogenised.
Homogenisation makes the fat droplets small, and the emulsifiers stop them
re-coalescing to give a fat slick on top of your drink.
The mix is sprayed into a hot airstream to dry it, then cooled to set the fat.
Two different types of atomiser (spray) can be used.
The density can be controlled, to a degree, to effect spoon-age and ease of make up.
Fat Powder are also used as whipping bases and as part of dry soup recipes.
