Sicily, as the centre of the Mediterranean Sea, is a natural cradle for the cultivation of olives.
In Sicily, it is traditional for the farmer to grow and collect his own olives and take them to the closest oil mill, of which there are 600 scattered around Sicily! The cultivator watches the pressing process, and a part of the oil produced is kept by the cultivator for his own personal use, and a part is left to the oil mill to cover the cost of milling: this is the same oil that we bottle and sell to you, our customers!
Sicilian olive oil is distinguished from other olive oils mainly by its high quality and taste, and it is no coincidence that many Sicilian products are awarded the Protected Designation of Origin (PDO). This endorsement provides quality assurance, as set out by the European Union, and ensures the authenticity of our home grown products. There are many factors that contribute to the quality of our oil. First and foremost, our climate and highly fertile soils. The Sicilian climate is perfect for the cultivation of olives, providing the light and heat in in the summer months, and a mild temperatures in the winter months.
A good oil, with a low content of oleic acid, is produced from the pressing of healthy olives: those picked by hand from the tree, and pressed within 24 hours of collection and especially free from the infestation of the wretched oil fly. The olive fly has a negative impact on both the quantity (devouring up to 25% of the olive pulp) and the quality (increasing the acidity of the oil and giving it an unpleasant Flavour). The oil fly needs a humid envornment for its reproduction, with temperatures below 20/25 ° in the summer months. Our oil is grown high up in the hills near Corleone, and our high summer temperatures render it free from infestation of this annoying pest.
L’Olio Alesci is a high quality extra virgin olive oil, produced with tried and tested Sicilian methods. The olive varieties we use to create our oil are the “ Nocellara”, “Cerasuola” and the “Biancolilla”. Although these olives are grown throughout Europe, the Sicilian soil and climate produces a fantastic fusion of the sea, the sun and wind, providing a highly unique taste.
Our olives are hand-picked locally, when they are half-ripe. This ensures the right balance of flavour and quality. They are picked one-by-one from the branch, guaranteeing they remain intact, and providing a higher quality oil. After the collection, the olives are placed in special windowed baskets, which ensure good ventilation and freshness as they are transported to the mill and pressed within 12 hours, using the well-known cold pressing method, ensuring a gentle pressing respectful of organoleptic quality.
