Cooneen Is a made from local goats milk in small batches. I has a very delicate Flavour uncommon amongst most goats Cheese.
Our Cooneen has a mildness not usually associated with goats cheese and was developed in response to peoples initial reactions to goats cheese as being too goaty and billyish. When young our goats cheese has a crumbly, almost feta-like texture, and is very fresh tasting. As it matures, the texture develops an extra thick double cream like texture which starts to penetrate from the snow white edible rind in towards the centre. Our Cooneen is always a delight to eat and no two are ever the same.
