The Osmotic Dehydration is a special technique, which is developed along with Indian Institute of Horticultural Research (IIHR, Bangalore). This technique facilitates the storage of fruits for a longer time duration and is instrumental in preventing the flavor, nutritional characteristics and microbial spoilage of the fruits or vegetables. With the use of this technique, we can remove over 30%-50% of the water from fresh ripened fruits, whereas and final vacuum drying of the fruit pieces takes around 10-12% moisture. Hence, the end product has excellent appearance and taste. These products also have superior flavor as compared to the conventionally dried fruits.
