Desiccated coconut contains 62 percent fat, of which 53.4 percent is saturated, almost double the amount found in fresh, raw coconut according to the website Health24. This is due to desiccated coconut's concentrated state and low moisture content. Unlike other types of saturated fat, however, the fat in coconut oil -- once labeled as unhealthy -- is now considered good for you. It consists of medium chain trigycerides, or MCTs. Thought to be healthier than "long-chain triglyceride" poly-unsaturated Vegetable Oils such as corn, safflower, cottonseed, sunflower and soybean, MCTs are now associated with several health benefits.
Because of their reduced chain length, MCTs, found in palm oil and coconut oil are more rapidly absorbed by the body than LCTs and more quickly converted into fuel for organ and muscle function. As such, they are readily available for instant energy, meaning a diet high in MCTs is ideal for people with high energy needs such as athletes, those recovering from illness and the elderly. MCTs contribute to weight loss in many ways. First, they provide about 10 percent fewer calories than LCTs.
