The P.D.O. (Protected Designation of Origin) certification is defined as being for foodstuffs which are produced, processed and prepared in a given geographical area using recognised know-how. These characteristics are due essentially or exclusively to the geographical area itself, including its natural and human factors.
Tuscia PDO extra-virgin olive oil (EU ruling n° 1623/05 passed by the 4.10.05 commission and published in the OJEC n° 259/15 on 5.10.2005) comes from three varieties of olives (Frantoio, Canino and Leccino) which must make up at least 90% of the extra virgin olive oil, either singly or together according to the different olive groves, with the permitted addition of other varieties (Moraiolo and Pendolino) to a maximum of 10%. This may cause slight variations from one area of harvesting to the next, giving a range of extra virgin olive oils all of excellent quality but with slightly different tastes; something for all palates that goes well with a wide variety of recipes. Tuscia PDO extra-virgin olive oil comes to the table emerald green in colour shot through with gold reflections; it has a fruity aroma reminiscent of ripe, healthy Fresh Fruit picked and pressed at just the right moment, quite a fruity taste with a balanced aftertaste which is in turn bitter and spicy to varying degrees. The extra virgin olive oil must have the following characteristics: its maximum free acidity, expressed in terms of oleic acid and in weight, must not exceed 0.5 grams per hundred grams of extra virgin olive oil; peroxides < 12 meq 0.2 per kilo of extra virgin olive oil and its panel test result must be > 6.5, while the overall yield of extra virgin olive oil must not exceed 20% of the olives used.
