From the Fermentis Site "A specialty yeast selected for wheat beer fermentations. The yeast produces subtle ester and phenol flavor notes typical of wheat beers. The choice of Wheat or Weizen bier fans. Available in 11.5g sachets." In our experience this yeast produces very good wheat beers with a mild clove/banana nose - not quite as pronounced as WLP300 at the same temperature, but close. We would assume you can squeeze more aromatics out of it by fermenting slightly warmer (above 72F), although the beer it produces is stylistically "ok" with the cooler fermentation. Fermenting warmer may make the spiciness too heavy, or produce more of a "bubble-gum" type of aroma instead - proceed with caution!. We recommend a 68-72F Fermentation for a Crisp, Tart Weizen!
