Fermentation               Cabernet Franc and Cabernet Sauvignon were inoculated with yeast the same day it was harvested and fermented at 30ºC for 8 days and macerated for a further 8 days before being pressed. After 2 days cold soak the Merlot tank was inoculated with a yeast strain from Bordeaux. Fermentation lasted for 5 days at 32ºC and was followed by a further 5 days of maceration before pressing.

Maturation                   After malolactic fermentation in tanks, the Cabernet Franc and Merlot were blended together and transferred transferred to barrels (25% new French Oak) for 15 months. The Cabernet Sauvignon component matured in stainless steel tanks. The 2 components were blended together in October 2012 and bottled after a light filtration
