Edam is a washed curd Cheese and typically mild in flavor, with small eyes. A Dutch pressed cheese of yellow color and fine flavor and originated from a so called village of Edam, near Amsterdam. Hailing from Holland, this mellow, savory cheese made at Kodai Dairy Products has a pale yellow interior with a yellow paraffin coating. It's made from part-skimmed milk and comes in spheres that can weigh anywhere from 1 to 4 kilograms. It's a great all-purpose cheese, especially good when served with dark beer.

Edam particularly is so versatile as it grates, slices and cubes easily. It does not crumble like other popular hard cheeses, and thus is ideal for cooking, whether in a sauce, salad or as a snack.
