Gelatin is a common biopolymer, which is prepared from animal connective tissue (such as skin and bone) after pretreatment and transformation, and then extracted at appropriate temperature. Because of its unique functional characteristics, it can be widely used as gelling agent, stabilizer, emulsifier, thickener, foaming agent, adhesive and clarifying agent in food, medicine, photography and cosmetics industry.
