The producer is a cooperative of more than 4000 olive growers in Jaén (Spain). Jaén is regarded as the “World’s Capital of Olive Oil”, the largest producer of olive oil in Spain and also World-wide accounting for 20% of the World’s olive oil.
The producer’s facilities, with 5,000 square meters, are organised in different sections, including a milling and production factory, a warehouse with a storage capacity of more than 4,000 MT, and a packaging plant.
This extra virgin olive oil is made with the Picual olives, giving off an intensely fruity smell, a colour with dominant shades of green, and a lightly spicy and bitter taste that guarantees the conservation of all its natural components.
PRODUCTION PROCESS |
Collection and Transport. The olives are harvested by hand in their optimum ripeness, and then transported in 25 kg breathable boxes to prevent any unwanted fermentation. The olives are milled the very same day.
Grinding. The olives are ground to a paste using a hammer action in order to break up the cellular structure and release the globules of oil found in the vacuoles.
Stirring. The stirrers move slowly and break up any parts not broken down during grinding. The little drops of oil liberated on the grinding phase come together. The temperature of the oil is kept below 280C to preserve all the flavour.
Decanting. The oil is separated from the solid residues and the water.
Natural Decantation. Any remaining water, cloudiness and sediments are separated in stainless steel containers.
Filtration. Within a week, the oil is filtered to eliminate any remaining water and solid impurities.
Storage. The oil is sent to the cellars and stored at a constant temperature in sloping wall stainless steel containers equipped with a drainage valve.
Tasting and Analysis. Before sending the product to the packaging plant, a team of expert tasters select the highest quality oil, which then is analysed according to ISO methodology.
Bottling and Labelling. The oil is bottled according to demand so the least possible time elapses between storage and consumption.
