SELECTION AND CLEANING OF oranges, We use a variety of oranges for our liqueur, that blend the
sweetness of Middle East Shamouti oranges and the sharp taste of other Israeli oranges. The bled of
the oranges that need to be tested in order to maintain our desire taste, because the natural change
according to the season in the year. The fruits are hand pick for the cleaning processing,
separating the oranges that are not full ripe and or not reach our level of quality. The oranges are
washed on cold water twice. The oranges peel is separate mechanically. The proportion of sweet and
sour is in a ration of 9 to 1. The peels are removed to a special slow dry processor and kept close
at all times, to preserve the aroma. After been completely dry they are grinding in pieces of 4 to 6
milimeters. After that is pack on 20 kilos vacuum pack and freeze to minus 15 CelsiusAlcohol, ABSORVING ORANGE TASTE.
The grinding peels are transferred to tanks, adding alcohol in clear water up to reach 60 percent
alcohol adding natural Vanilla sticks for a period of 12 days at a 6 Celsius .After 12 days the mix
is check for aroma, taste and color. If the mix does not reach our level of quality we add
additional above peels, between 15 to 20 percent additional subject to liqueur specialist taste, for
additional 12 days processing. After reached the desirable taste we add the sugar and the clear
water to bring to a level of 40 percent alcohol. We increase the temperature to 26 Celsisus and
adding clear oxygen, in a very small amounts and keep mixing during the process, in order to
oxidizing the product. This is in order to maintain the aroma that we desire in a close system in
order to improve the body of the liqueur. This is done for a period of 48 hours, and check again to
see if reach the desirable level of oxidization. If not reach that level we add more for another 15
hours.
