L-ascorbic acid , or simply ascorbate (the anion of ascorbic acid), is an essential nutrient for humans and certain other animal species. Vitamin C refers to a number of vitamers that have vitamin C activity in animals, including ascorbic acid and its salts, and some oxidized forms of the molecule like dehydroascorbic acid. Ascorbate and ascorbic acid are both naturally present in the body when either of these is introduced into cells, since the forms interconvert according to pH. |

Vitamin C(ascorbic acid)
White crystal or crystalline powder. Odorless. Sour. Flash point 99. Melting point 187 ~ 192. Browned gradually by light. Dry conditions remained stable in the air, but in solution rapidly degenerate when in the presence of air. It is stable when PH value of 3.4 ~ 4.5. About 1g of this product soluble in 5ml water and 30ml ethanol.
0.5% solution PH value of 3 and 5% for 2. Insoluble in chloroform, ethyl ether, non-volatile oil and benzene. Strongly reduced and polyphenol oxidase inhibitory effect, it added to beer, fruit juice, etc. can be used as antioxidants in food.
