4.APPLICATION
1. Food
It can increase effect of gluten in flour taking sodium alginate as additive of fine
dried noodles. It can eliminate adhesion stress of noodle organization, reduce
rate of broken and wetted flour, enhance rate of quality goods; furthermore, it can
restrain the acid of noodle. It doesn't stick and muddy soup with pliability and tasty.
The specific volumetric dilatation of bread taking sodium alginate as additive is very

Sodium alginate can also be used as emulsifier of cake; sodium alginate can
