【Product Overview】
Tagatose, also known as D-Tagatose or D-Lyxo-hexulose, is a natural rare sugar classified as a hexoketose monosaccharide. It is a ketohexose sugar and the C-4 epimer of fructose. Tagatose is naturally present in small quantities in various foods, including dairy products (such as heated milk), certain fruits, and cacao. It is produced from lactose extracted from dairy processing byproducts through enzymatic conversion and fermentation processes, making it an environmentally friendly and renewable sweetener solution.
Our food grade D-tagatose is a white to off-white odorless crystalline powder with a pure, clean sweet taste. It is freely soluble in water (solubility approximately 62% at 30°C). Its sweetness is approximately 90-92% that of sucrose with an excellent taste profile closely resembling sugar, while providing significantly lower calories and minimal glycemic impact.
