Gellan gum comes from a micro-organism called Pseudomonas elodea that grows on an aquatic plant Elodea. It is grown in a bioreactor called a fermenter where it is concentrated and collected before purification, pressing, grinding and drying out to a powder.
Gellan gum forms gums in presence of anions and is reactive at low concentrations (0.5 to 5 g/Kg).
The resulting gels have low solid contents, are quite transparent, relatively stable to heat and to a wide range of pH (3 to 10).
Given these properties gellan gum can be used in many food applications:
Gellan gum is soluble at around 70° C. Stir well for ten minutes to obtain a good dispersion.
Gellan gum is a permitted Food Additive in EU assigned number E418. Use of this product is not recommended for babies and young infants. For all commercial use, please follow our disclaimer and advice and refer to regulatory texts for limitations to use.
Store in a dry, cool place, away from direct sunlight in its original packaging.
