Our Acorn-Fed Iberian Paleta comes from a selection of pure bred Iberian pigs, allowed to graze free range in acorn oak groves, and is produced using the best traditional, hand made methods.The front legs of the iberian pig are processed with salt and then undergo a very slow drying and maturing process which gives them an exquisite texture, taste and aroma, resulting in a gastronomic pleasure that brings sheer enjoyment. All this is done subject to the strictest quality controls.
