The hydrolysis (coffee extract made of soluble solids plus water) isfrozen at a temperature of 50ºC below zero, then ground and sorted bysize, to be taken to the drying chambers. In the drying chambers, underextreme vacuum conditions, the humidity is extracted from the frozenextract by sublimation, a physical property by which the water isconverted from solid to gas without going through the liquid phase. Theproduct is ready to be consumed.
