Epsilon polylysine is a natural food preservative produced through natural fermentation using the bacteria, Streptomyces and more specifically streptomyces albulus underaerobic conditions. Polylysine consists as a small natural homo polylymer(25-30 L-lysine residues) of the essential amino acid, L-lysine. Its application includes cakes, rice, cheese and other dairy foods and meats.

1.Broad antibacterial spectrum:it has obvious inhibition to Gram + and Gram - bacteria, yeast,mould ,virus and many other micro-organisms.

2.Good thermal stability:below high temperature(120℃ for 60min).polylysine does not decombose, nor experience inactivation, and is suitable for cooked food.

6.Strong blends: as a natural preservative, polylysine can be used alone. In addition, it has a synergistic effect when blending with Potassium Sorbate,Citric acid, Malic Acid, Glycine and Nisin. After blending, its bactericidal action will be improved greatly.

7.Safe for human body: after eating,polylysine does not accumulate inside the human body. It partly breaks down into L-lysine, an essential amino acid for human health, 

 

Application:

Polylysine has already been used generally as a Food Additive recognized its safety and advantage in Japan and Republic of Korea. Moreover,  Polylysine is acknowledged as a world standard food additive by this recognition of Polylysine as a GRAS material of FDA in US. It can be used in rice, noodles, cakes, snacks, and ice creams, salad, Canned Foods and meat products.

In addition, polylysine is used in SAP to produce sanitation products, such as sanitation napkin and diapers because of its good absorption of liquid. It can also be used as a carrier for pharmaceutical molecules. Moreover, even in a field other than food, taking advantages of characteristics of polylysine ,the application to fiber, processed goods, cosmetics as an antibacterial agent excellent in kitchen and bath room application has also been developed.
