The three species of amaranth used in Vietnam are Red Amaranth (Amaranthus tricolor), Rice Amaranth (Amaranthus viridis) and even wild Amaranthus (Amaranthus spinosus). Boiled amaranth when eaten with seasoned dipping sauce or sesame seeds, broth as soup. Amaranth cook soup often add dried shrimp, meat to increase sweetness.
