Halibut is the largest of the flat fish species. This fish can range from 10 lbs. to as much as 400 lbs. Although most commercially caught halibut are between 10 and 150 lbs. The meat is lean, mild and has a delicate sweet flavour. It is snow white in colour when cooked; the texture is firm and flaky with minimal bones.
