Our pastured pork is exclusively from our Red Wattle pigs raised on our farm.  This pork is all raised on soil and pasture with access to a NON genetically modified (GMO) grain mix.  The flavor and quality is superb, in large part due to their varied diet of grains, as well as foraged roots, grasses, bugs, and earthworms.  Our pigs are NEVER fed animal by-products such as animal fat or bone meal.  Also, we do not use hormone implants, added hormones of any kind, or routine antibiotics.

The Red-Wattle breed is a rare heritage breed from Texas and Louisiana and is recognized by the Slow Food organization in their Slow Food Ark of Taste.  Pork from this breed is sought after by many chefs for its quality and flavor.

All of our sausages, smoked pork, bacon, and Canadian bacon are processed without the use of MSG, artificial preservatives, or nitrates.  The bacon is smoked only for the best flavor without added salt or chemicalsour customers enjoy being able to salt or spice this bacon to their own personal taste.  The sausages are made at the processing facility we use in Muenster, TX which is family owned and operated.  The sausage recipes are from a German sausage maker and are excellent.
