fucoxanthin is a carotenoid found in edible brown seaweeds , most specifically in brown seaweed such as wakama (Undaria pinnatifida) and hijiki (Hijikia fusiformis), which are commonly used in Asian cuisine. Some metabolic and nutritional studies carried at Hokkaido University ind icate that fucoxanthin promotes fat burning within fat cells in white adipose tissue by increasing the expression of the fat-burning protein UCP1( also known as Thermogenin or uncoupling protein 1 )
