Use: as food sourness agent, fumaric acid plays an important role in bacteriostasis and antisepsis , which is used as regulator of acidity, acidulant, temperature resistance oxidation assistant, bloat accelerant and flavor. Fumaric acid is the intermediate for fine chemicals like medicament and optics bleacher and so forth. In medicament industry, it is used to produce the alexipharmic sodium dimercaptosuccinate and the ferrous fumarate that cures microcyte anemia. Fumaric acid is also used to produce unsaturated polyester resin and also is the main raw material of producing L- aspartic acid.
