It is a kind of natural edible pigment extracted from gardenia fruit of rubiaceous plant. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder from light gray to smalt is soluble in water and solution of water and alcohol, but insoluble in organic solvent. The environment pH value has little influence on its hue and stability.
Application: it can be used in the coloring of wine, carbonic acid drinks, juice drink, jam, jelly, candy, cakes, ice-cream, pastry, and puffed food.
Package: inner package is aluminum foil bag; outer package is carton.
