Glaze is a confectionary semi-finished product that covers the body, giving the finished product a hardness, fragility at ambient temperature, gloss and an extended shelf life. Historically, such high performance is performed when cocoa butter is used as the fat base, which is known to "melt in the mouth, not in the hands".
Confectionery products are diverse in form, weight, surface topography. Our customers vary their requirements for the thickness of the coating, its color and elasticity. In order to satisfy such diverse wishes, it is not enough to develop one unified formula.
