Barley is the most ancient cultivated grain culture. The Egyptian pharaos and the Babylon emperors ate barley porridge more than 6000 years ago, in China barley got cultivated 4000 years ago. From Egypt barley has got into Greece and Roman Empire. Approximately till 15 century grain of barley was milled mainly in flour from which bread was baked. Despite of an unattractive grey shade, on usefulness barley grain competes with oat.
The main value of barley is in its grain structure. Unlike wheat and rye whose covers of grain (the main receptacle of vitamins and fiber) are rather weak and fly away at processing, in barley they are densely pressed to grain and form a rigid film. Owing to it, barley is slowly digested, providing an organism with a huge quantity of energy. Now barley is used on forage to Cattle and as raw material for malt production, which is necessary in the brewing industry. Products, which are produced of barley grain, the so-called malt extracts, are used in textile, Confectionery and a pharmaceutical industry. Pearl and barley grouts, a substitute of coffee, are produced from grain; barley flour is added to wheat at a batch of bread. Barley grain contains 13% of protein, 64, 6 % of carbohydrates, 5, 5% of fiber, 2, 1% of lipo. The barley protein is more valuable than the proteins in wheat, especially by the amount of aminoacid-lisin.
The standards for the malt grain of barley are very high: it should be completely ripe, firm, not damaged during the thrashing, healthy, pure and has a high viability. The following technical requirements on grain are established in standards on barley: humidity, weed and grain impurity, contamination of blasts, condition on humidity and content of impurities. Barley for the processing into grouts by the main quality activity should correspond to the following technical requirements, such as natural weight no less than 630 grams per liter, the content of small grains no more than 5,0%. For the barley, which is meant for conversion into malt at the alcohol production, the most important quality activities are: natural weight no less than 570 grams per liter and the ability of sprouting no less than 92, 0 %. For fodder barley limit rates on a condition (grain healthy, not overheated), humidity, weed, harmful and grain impurities are established.
