Grana Padano is not only the name of an excellent cheese
It is the trademark which guarantees on every cheese the production procedures followed by the company, the same trademark which for 40 years has distinguished the quality of the Fiandino Dairy.
Grana Padano is made in traditional cauldrons, where the milk is brought to a suitable temperature for the length of time needed.
This is the secret of quality: to respect the ingredients, values and stages of production.
After adding the natural enzymes, selected at the Dairy, and after adding the cheese-rennet, the milk coagulates. The curd is then cut by hand with a curd knife, which divides the curdling in equal parts like grains of rice. The cheeses are extracted with rough linens and placed on tables, their ph is tested every hour.
The Grana Padano is then ready to be immersed in brine, and subsequently, for a long period of maturing, which in the Fiandino Dairy exceeds the minimum nine months required by the certifying authority, in order to guarantee better organoleptic characteristics.
Each branded cheese allows a traceability of the whole chain thanks to the indication of the company and the production lot.
