Graves of Portets, in the South East of Bordeaux on the left side of the Garonne river. Soil : Grave and stones. Yield : 45 Hl / Ha.

Grape VARIETY: 80 % Merlot, 20 % Cabernet Sauvignon 25 to 35 years old vines.

VINIFICATION: About 3 weeks vatting in stainless steel tank. Fermentation temperature maintain at 28°C to 30°C by thermoregulated pump to extract a maximum of coloring matter from the grape marc.

TASTING NOTES:

Colour: dark garnet robe

Nose: typical scent with red fruits and flower aromas

Palate: fleshy and robust on the palate

SERVING TEMPERATURE:

Serve between 16°C and 18°C

Red meats as duck magret or lamps in sauce, and strong Cheese as Roquefort, Maroilles or goat cheese.
