FUNCTION:
The main constituents of coffee include polyphenol compounds, polysaccharides and caffeoylquinic
acid derivatives such as Chlorogenic acid and Cynarin. Chlorogenic acid, long known as an
antioxidant with potential anticancer activity, also slows the release of glucose into bloodst r eam after
a meal.
When green coffee beans are roasted, the Chlorogenic acid content is degraded, along with most
of its antioxidant activity.
