It is the fruit of the Olive tree, developed in the valleys of tacna and Yauca that are on the south of Peru.
They are whole olives of great size, with firm and consistent pulp, of good texture and small pit, processed using the Spanish or Sevillian in brine style, of 1st. quality, due to the quality control, that begins in the harvest, cleaning, classification, selection with machine and hand (HPS), calibration, packing and suitable storage. All the process under strict sanitary control.
