Hard cheese is distinguished by the long period of storage and maturing required to produce its full flavour and volume.
Depending upon the type of cheese in question, the ripening process can last anything from a few months to several years. The process leads to a considerable reduction in water content and therefore to a high level of fat in dry matter of over 60 per cent.
Hard cheeses come in whole, block or cylinder form, with or without eyes.
