Brief Introduction
Corn syrup is a starch syrup, which is made from maze starch undergoing enzymatic, saccharifying, refining and condensing processing.
High Maltose Syrup has low and moderate sweetness, good taste which is strong and delicious, due to the heat and acid stability of maltosein high maltose syrup maltose in comparison, there is not food or sweet metamorphic change caused by the decomposition of maltose under usual tempreture. Therefore maillard reaction is not easy to occur when heating and for the production of candy with a low DE value, high boil temperature, it has especially good effect on the extension of product shelf-life.
Application:
In cold products: It will improve product texture, and product quality while lowering production
costs, and at present as a thickener and a further cold plasticizer it has
been widely used in b everage industry .
In bread, baked products etc.: It can serve to prevent starch from aging, extend the shelf-
life and so on , with good m oisturizing p roperties
In other foods :such as candied fruit, lotus seed paste, jam, cakes fillings, dehydrated
vegetables, ham .
