The rambutan is one of the most exotic fruits on this planet, each piece resembling a little crimson and green sea urchin. Its name, “rambutan”, means hairy ; in Vietnam it is called chôm chôm, or “messy hair”. The fresh fruit is oval in shape, about 2 inches long, and has thin, leathery skin covered in fleshy, pliable spines. The color can range from greenish-yellow to orange or, more commonly, crimson. The fruit will only ripen on the tree. Inside, the juicy flesh is generally white or even rose-tinted and adheres to a large ovoid seed.
