The Leatherwood plant grows only in Tasmania. The honey is gathered by bees in the protected Tarkine Wilderness, a pristine temperate rain forest in Northwest Tasmania, where Blue Hills is the only apiary in the heart of this wilderness. This is a mono-floral honey which is one of the finest and most unique in the world. It has a distinct and unique Flavour of its own and you can really taste the wilderness. Like Manuka honey, Leatherwood honey also has medicinal properties. Based on research (RIRDC Publication No 05/040 RIRDC Project No UQ-102A) and random sampling, it is noted that Leatherwood has naturally high antibacterial activity, ranges from active 10.6 TA to around 15 TA, therapeutically beneficial. Currently ongoing research and further testing is still being carried out.

Why is your honey turning candy (granulate)? Is there any sugar added to it?
Granulation is a natural process of true pure honey. All honey will granulate in time but never spoils. The time frame for the granulation to take place depends on the characteristic of honey and climate, some turn candy faster and some slower. It will granulate starting from the bottom to the top of the bottle. Initially the texture of candied honey is like grandules and over time it will turn into creamy or soft butter. Please take note that granulation does not affect honey's taste or purity. It can be used candied or restored to its liquid state.
What should I do with candied (granulated) honey? How do I reliquefy my honey?
To do this, place the container in a pan of warm water (not hot) till liquid. The jars may be placed in a luke warm oven (less than 45 degrees celcius) till liquid. To protect the delicate color and flavour, do not over heat.
