It comes from the Bellota Iberian pig's front legs, a pig which has been raised in the pasturelands of the Natural Park of Sierra de Aracena. These pigs are raised independently and fed with acorns, mushrooms, olives, and natural plant roots during the montanera (period when the acorns drop from trees (mast-feeding season).
