It comes from the Bellota Iberico pig's front legs, a pig which has been raised in the pasturelands of the Natural Park of Sierra de Aracena. These pigs are raised independently and fed with acorns, mushrooms, olives, and natural plant roots during the montanera (period when the acorns drop from trees (mast-feeding season)). Certified by the organization “Jamón de Huelva”. It achieves its drying process in our “secaderos” (natural drying areas) and possesses the same characteristics than the acorn-fed Iberian ham but it is even tastier (similar difference between the Iberian cured pork loin and the Iberico Bellota cured pork loin).
