Ibores Cheese comes from the North-Eastern part of Caceres, in Extremadura. It is made with raw goat´s milk from the Verata and Retinta breeds, using mixed curdle techniques. It is a semi-cured paste, runny and light, not very compacted. The rind is rubbed with olive oil (natural variety) or with smoked paprika from La Vera (paprika variety). Its Flavour is direct, milky, and very buttery on the tongue, with aromas of yogurt and smoked spices.
