Detailed introduction to Ikura Salmon Caviar-Grade 1 Chum / Keta Salmon Roe:
Little Pearl normally contracts 3 producers in Alaska to produce salmon caviar that we sell under our label. This is the ikura production process. The quality is first rate, and we have been recognized by Bon Appetit as Best of the Year salmon caviar for 2007.
This lot is from the South Central fishery near Cordova, Alaska. Because fishing is slow this year, we have contracted two harvestor/ikura producers to work at the same time in order to ensure we produce at least one 40-foot container. The catch was off significantly last year and many of our customers did not have enough product for the holiday season. Production costs are rising, and before we begin shipping smaller lots to our customer globally we would like to offer new buyers to purchase the whole load, or one of two halves. Little Pearl is expanding its global commodity network in advance of large scale production.
Some of our varieties have a more delicate shell, more appropriate for ikura, some are firmer, better suited for caviar. This is peak run roe, mature, medium salt level that may be used for sushi or caviar. We consider this to be the highest grade of salmon roe we sell, and will supply laboratory tests to confirm nutritional and microbial quality. Samples are available for serious buyers interested in an immediate purchase.
Products may be blast frozen, or can ship refrigerated. Shipping containers are 20 or 40 feet, refrigerated or frozen. Product will be aggregated in Seattle from two fishery sites in the greater Prince William Sound region. Price is FOB, shipping from Seattle. If buyer of entire lot would prefer the load ships from Anchorage or Boston, we can aggregate product there.
