The freezing system IQF ( Individually Quick Frozen ) extends the life of those products , such as cheese , which deteriorate quickly due to the action of live milk enzymes. This system of deep freezing guarantees the integrity and perfect preservation of cheese for twelve months.
The advantage of IQF is due to the fact that with IQF system the cheese is completely frozen within 30 minutes while freezing time with standard methods is about 2 hours ; the result of this deep freezing is that , once defrosted , the cheese keeps unchanged the characteristics of flavour and consistency .
